The Rodez family has worked vines in Ambonnay across documented generations, back to Jean-Baptiste Rodez, born in 1757. A disappointing 1984 vintage pushed the family to rethink its viticulture: they set a new strategy in 1989, phased out herbicides, and began testing organic techniques in the spring of 1995. Biodynamic practices followed in the mid-2000s, and the estate received Haute Valeur Environnementale certification in June 2012.

The domaine has been certified organic since 2012 and Demeter-certified biodynamic since 2015, and has used essential-oil treatments against mildew and oidium since 2012. Since 2014, Mickaël and Aurélie Rodez have continued this work, developing biodiversity areas across the vineyard. In the cellar, the wines are vinified in small oak barrels without malolactic fermentation, cold stabilization, or filtration.
