Domaine Trapet Père et Fils is based in Gevrey-Chambertin, where the family has made wine since 1870, and its vines include three grands crus, Chambertin, Chapelle-Chambertin and Latricières-Chambertin. Jean-Louis Trapet moved the vineyard to biodynamics in the mid 1990s, certified by Biodyvin since 1998 and Demeter since 2005. The grapes are partly destemmed and macerated cool before a long fermentation, the wine goes down by gravity to the barrel cellar with 30 to 75 percent new oak according to the cuvée, and no sulphur is used before a small dose at bottling. Jasper Morris describes the wines as leaning towards elegance and finesse rather than power.
