Paul Jaboulet Aîné was founded in 1834 by Antoine Jaboulet in Tain l'Hermitage, and was run by his sons Paul and Henry and their descendants through the 19th and 20th centuries. Louis Jaboulet took charge of the house in 1940, and Gérard Jaboulet led it from 1977 until his death in 1997. In 2006 the estate was bought by the Frey family, owners of Château La Lagune in Bordeaux, and Caroline Frey took over its direction.

In 1919 the house bought the Saint-Christophe chapel plot at the top of the Hermitage hill, and its Hermitage La Chapelle takes its name from that site. Jaboulet created its Parallèle 45 Côtes du Rhône in 1950. The estate's vineyards span the northern Rhône, from Côte-Rôtie and Condrieu in the north to Cornas and Saint-Péray in the south. Jaboulet obtained organic certification and completed its move to biodynamic farming in 2016, and in 2023 grouped its La Chapelle and Le Chevalier de Sterimberg holdings into a single Domaine de La Chapelle.
