Hubert Lamy founded the domaine in Saint-Aubin in 1973, on eight hectares of vines. His son Olivier finished school in 1993, completed his military service, then trained for a year at Domaine Méo-Camuzet before joining the family estate in 1995. In 1997 Olivier stopped selling grapes to négociants and began bottling the entire crop under the domaine's own name, which let him follow each parcel from vine to bottle.

The estate has grown to close to eighteen hectares, planted roughly 80 percent to Chardonnay and 20 percent to Pinot Noir, across Saint-Aubin, Chassagne-Montrachet and Santenay, with a small parcel of Criots-Bâtard-Montrachet grand cru. The vines are farmed with sustainable, organic methods, using Guyot Poussard pruning for Chardonnay and manual de-budding to limit each vine's yield. In the cellar, the white wines are crushed and pressed, settled overnight, then left to ferment on ambient yeast and age up to two years on the lees in 300 and 600-litre barrels before a further period in tank.
