Cossard did not come from a family of vignerons. He worked for years as a courtier, the broker who connects Burgundy's growers, before buying his first parcels of vines in Saint-Romain and Auxey-Duresses in 1996 and founding Domaine de Chassorney. By 2010 the estate had grown to around ten hectares, with plots added in Pommard, Volnay, Nuits-Saint-Georges and Savigny-lès-Beaune. In 2006 he set up a separate négoce house with his partner Laure, buying fruit from growers who farm organically, which lets him work with sites such as Meursault and Puligny-Montrachet, and beyond Burgundy in Jura and Languedoc.
The vines he farms average around 40 years old. He works biodynamically, ploughing with a horse and avoiding synthetic fertilizers and herbicides, using homeopathic treatments based on essential oils along with copper and sulfur, and harvesting by hand. In the cellar he ferments with indigenous yeasts and no temperature control, works reds with whole clusters, and uses concrete eggs, earthenware jars and Georgian qvevri for some wines. Wines are bottled with no additions and only light filtration.
