Domaine Vincent Dauvissat is based in the town of Chablis. Vincent Dauvissat has led the harvests and the cellar work at the domaine for decades, and his daughter Etiennette also works the vines. The domaine added its Vaillons parcels, in the lieux-dits Chatains and Beugnons, in 1979; Vincent Dauvissat has said that at first the wine was fatter and not in the style of the house at the time, though it proved capable of ageing well.

The range runs from Petit Chablis, a single parcel on hard limestone on the plateau, through village Chablis near the premier cru Forêts and in Poinchy, to premier crus Sechets, Vaillons, Forêts and Montée de Tonnerre, and on to the grand crus Preuses and Les Clos. Les Clos is usually assembled from seven separate parcels. The Montée de Tonnerre bottling is a more recent addition to the range, with the 2022 vintage marking its tenth year of production.
