Sébastien Caillat joined the Lamy family's domaine in Chassagne-Montrachet, Lamy-Pillot, around 1998, after marrying Florence Lamy. In 2008, neighbouring growers who wanted to keep their vines in careful hands rented Sébastien and Florence a first hectare of premier cru land, and Domaine Lamy-Caillat began as a separate, much smaller venture alongside the family estate.

The domaine farms scattered premier cru parcels: Chassagne-Montrachet Les Caillerets, Romanée, Grande Montagne and Champs Gain, plus a small plot of Chassagne-Montrachet village land and the Saint-Aubin premier cru En l'Ebaupin, replanted in 2012 after ten years left fallow. The vines are farmed organically, without certification. In the cellar, the white wines are pressed on an old Vaslin press with the sediment left in, aged around a year in barrel with at most 20 percent new oak, then move to tank for a second year before bottling without fining or filtration.
