Domaine Castagnier was founded in Morey-Saint-Denis in 1890, when the great-grandfather of Jérôme Castagnier bought the estate's first parcel, at Marey-Monge. His maternal grandfather, Gilbert Vadey, sold most of the harvest to négociants, and Jérôme's father Guy began estate-bottling more of the crop after starting in 1975. Jérôme, who trained as a trumpet player at the conservatories of Paris and Dijon, took over progressively from 2005, the year three generations worked the harvest side by side.

The domaine farms 4 hectares across fifteen parcels, including 2 hectares of grand cru: Clos de la Roche, Clos Saint-Denis, Clos de Vougeot and Charmes-Chambertin. Some vines are old, including a parcel in Chambolle-Musigny planted in 1933 and vines in Clos de la Roche more than sixty years old. In the cellar, Jérôme favors gravity over pumping, limits punch-downs in favor of rack-and-return, and macerates four to six days at cold temperature before fermentation, aging the wines mainly in barrels from the cooperage François Frères.
