The Vauthier family's ties to Château Ausone go back to 1690, when an ancestor bought the property; Pauline Vauthier is the eleventh generation of the same family to work these vines. In the twentieth century, ownership was shared with the Dubois-Challon family. The Vauthiers bought out the Dubois-Challon shares in the mid-1990s, and Alain Vauthier became managing director; Hélyette Dubois-Challon kept a right of residence at the château until her death in 2003.

The vineyard covers about 7 hectares on a limestone plateau above Saint-Émilion, with clay and limestone soils on the hillside below, and vines that include plots over a century old. Pascal Delbeck ran the winemaking from 1976, and Michel Rolland began advising as consulting oenologist in 2002. In July 2021, Pauline Vauthier confirmed that Ausone, ranked Premier Grand Cru Classé A since the Saint-Émilion classification began in 1954, would not seek re-ranking in 2022, withdrawing alongside Château Cheval Blanc.
