Nicolas Ruinart founded the house in Reims in 1729; its first documented delivery of champagne went out in January 1730. Ruinart describes itself as the oldest established champagne house, having produced champagne exclusively since its founding. Its cellars, chalk pits originally quarried in Gallo-Roman times, were acquired by the house in 1768; they were classified as a historic monument in 1931 and hold a constant temperature of about 11°C underground.

Chardonnay is the grape most associated with Ruinart's style. Dom Ruinart, its blanc de blancs made entirely from Chardonnay, was first released in 1959; a rosé version followed in 1962, adding a small proportion of Pinot Noir. The non-vintage R de Ruinart blends a minimum of 40% Chardonnay with Pinot Noir and includes about 25% reserve wines. Ruinart belongs to LVMH Moët Hennessy Louis Vuitton.
