Roger Pouillon settled at Mareuil-sur-Aÿ in 1947 and founded the domaine; his son and then his grandson Fabrice followed. The estate works seven hectares in some forty parcels, in Mareuil-sur-Aÿ, Aÿ, Avenay, Mutigny, Tauxières, Épernay and Festigny, planted with Pinot Noir, Meunier and Chardonnay, some of them replanted by massal selection. The vines are farmed organically, ploughed by horse and fed with farm compost, with a permanent cover of mixed plants between the rows.
The wines are pressed in the traditional way and raised in barrels and demi-muids, with trials in ceramic and concrete eggs. In 2004 Fabrice Pouillon developed his own way of making the second fermentation without adding cane sugar, marked M.F.P. on the labels, first used for the Chemin du Bois.
The range here includes the Grande Vallée blend, the Brut Rosé premier cru, the parcel wines Le Montgruguet and Les Blanchiens from premier cru vines in Mareuil, Chemin du Bois, and the Solera, which has blended successive vintages since 1997.
