The village appellation was created on 11 September 1936. It covers 289.36 hectares of red, of which 130.44 in premier cru, and 15.82 hectares of white, of which 12.06 in premier cru. The appellation falls into two parts divided by the town itself: the northern portion reaches the border of Vosne-Romanée, on pebbly alluvium and silty deposits; the southern section lies partly in Nuits and partly in Premeaux, on deep marly limestone soils.
The 41 premier cru climats include Les Saint-Georges, Les Vaucrains, Les Cailles, Les Pruliers and Les Porrets-Saint-Georges south of the town, Aux Boudots and Aux Chaignots on the Vosne side, and the Clos de la Maréchale and Clos Arlot at Premeaux. The Bourgogne wine board describes the red as intense in colour, with cherry, strawberry and blackcurrant when young and leather, truffle, fur and game with age: muscular and vigorous, chewy and full-bodied. Average production over 2017 to 2021 was 10,675 hectolitres of red and 371 of white a year.
Three estates with a page here hold vines in the appellation. Domaine Prieuré Roch, based at Premeaux-Prissey, owns the Clos des Corvées, a monopole of five hectares. Domaine Jean Grivot, from Vosne-Romanée, makes the premiers crus Aux Boudots, Les Pruliers and Roncières. Domaine Emmanuel Rouget, at Flagey-Échezeaux, also makes a Nuits-Saint-Georges.
