Nestarec was born into a winemaking family in Velké Bílovice, a winemaking village in South Moravia. His father spent years working in a German vine nursery, bringing back vines, know how and sometimes second hand equipment for the family's own plots. One of those plots, Zadní Hora, had belonged to the family before the Communist state took it in 1948; it was returned to them through property restitution after the Velvet Revolution. It had been planted with Blaufränkisch, but the harsh winter of 1987 killed the vines, and the local cooperative replanted it in 1988 with Pinot Gris, Grüner Veltliner and other varieties.

Nestarec has since added plots such as Úlehle, a 0.4 hectare parcel of pure loess bought in 2020, planted in the mid 1970s under the Communist era cooperative with vines obtained through a barter between professor Kraus and the Austrian viticulturist Lenz Moser. Other family plots include Sahary, six hectares within a twenty hectare sandy site near Moravský Žižkov bought in 2003, and Firma, four hectares planted in 2019 beside the winery itself. All the vineyards are farmed without herbicides, pesticides, industrial fertilizer or systemic treatments.
