Family documents trace the Carillons' work as vignerons in Puligny-Montrachet back to Jean Carillon in 1520. The family kept its vines through the phylloxera crisis of the late 19th century, when Prosper and Jeanne Carillon moved briefly to Chartres before returning to replant after the First World War. By the 1960s Louis Carillon had turned the estate over entirely to Chardonnay, ending its earlier mixed farming and livestock. François Carillon took charge of the family vineyard in 1988 and worked alongside his father and brother Jacques until 2010, when the domaine was divided between the two brothers and Domaine François Carillon was created.

Since 2010 the estate has farmed just over 16 hectares across Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin, on brown calcareous, rocky and well-drained soils, with vines facing east. About 90% of the plantings are Chardonnay.
