Philippe Pacalet is based in Beaune and has worked as a micro-négociant since 2001: he owns no vines but buys grapes from plots farmed to his own specifications, across some thirty climats of the Côte d'Or. The grapes are picked and sorted as whole bunches, trodden by foot, and fermented on their indigenous yeasts, with no sulphur used during vinification. La Revue du Vin de France notes that the wines drink well in their youth and age well.
