Producer signature
Ormiale is a two-hectare vineyard started in 2007 by Fabrice Domercq and Jasper Morrison, with vines in the Côtes de Castillon and Côtes de Francs and a cellar at Mérignas, in the north of the Entre-deux-Mers; the red is sold as Bordeaux Supérieur. The vines are Demeter-certified biodynamic, yields run at 20 to 25 hectolitres per hectare, and the grapes are picked and destemmed by hand. Fermentation starts on indigenous yeasts without sulphites, the wine ages about eighteen months in barrels of 225 to 600 litres and in steel, and it is bottled without fining or filtration, with a small dose of sulphur only when needed.
