The Flörsheim-Dalsheim estate where Klaus Keller did more than anyone to prove that the limestone hills of Rheinhessen's Wonnegau, long seen as a viticultural hinterland, could yield serious Riesling. Most single-vineyard wines are basket-pressed slowly and ferment on native yeasts for eight weeks or more.
