Sylvie Esmonin's great-grandfather moved from Vosne-Romanée to Gevrey-Chambertin to marry into a local winemaking family, and the couple worked for Comte de Moucheron while gradually buying vineyard land. Sylvie's grandfather and grand-uncle later ran the property, and in the 1950s the family bought the Clos Saint-Jacques parcel from Comte de Moucheron. The estate operated as Domaine Michel Esmonin et Fille before Sylvie, trained as an oenologist in Dijon, joined her father's operation around 1989 and pressed for the domaine to bottle its own wine instead of selling grapes. Her father formally retired in 1998, though he continued working in the vineyard for several years afterward.
The domaine farms about 7.8 hectares, split evenly between owned and leased land, with 4.4 hectares in Gevrey-Chambertin village appellation and 1.7 hectares in the Clos Saint-Jacques premier cru, plus smaller parcels of Bourgogne Rouge, Bourgogne Blanc, Bourgogne Aligoté, Côtes-de-Nuits and Volnay-Santenots. In 1990, Sylvie stopped using herbicides and later phased out pesticides and anti-rot chemicals, relying on contact treatments and hand labour for green harvesting instead of mechanical work. She also moved away from destemming toward whole-cluster fermentation in open wooden vats, a method she adopted after studying historical Burgundian winemaking.
