Jean-Nicolas Méo and Jay Boberg had been friends for more than thirty years when Boberg suggested, in 2011, that they start a small winery together in Oregon. Méo had by then spent close to twenty-five years making wine at Domaine Méo-Camuzet in Vosne-Romanée and was drawn to working with Pinot Noir in a new terroir. The two spent time exploring the Willamette Valley before buying a vineyard and building a winery of their own; their first vintage was released in 2014.

Their estate vineyard, Bishop Creek in the Yamhill-Carlton AVA, was planted in the late 1980s on ungrafted rootstock and is farmed organically; it supplies every multi-site wine in the range, and most of the purchased fruit comes from organic or biodynamic growers as well. In the cellar, fermentation relies on native yeasts, the grapes are fully destemmed and pressed slowly at low pressure, and the wines age in François Frères oak barrels, roughly a quarter to half new, before bottling unfined and unfiltered. Beyond Bishop Creek, Domaine Nicolas-Jay also sources fruit from growers in the Yamhill-Carlton, McMinnville and Dundee Hills AVAs for single-vineyard wines and a Willamette Valley blend.
