Clos de la Perrière was established in 1142 by Cistercian monks from Cîteaux, on the site of a former ducal hunting lodge in Fixin. In the nineteenth century, the Burgundy authority Dr Jules Lavalle ranked the clos alongside vineyards that later became grand crus, at prices comparable to Chambertin, but when the modern appellation system was set out in the twentieth century, Clos de la Perrière was classified only as Fixin premier cru. The Joliet family bought the property in 1853, and it remains a single-owner monopole, unlike many Burgundy clos that were later divided among several families. The estate is run by Bénigne Joliet, the seventh generation to work the clos, who also created a separate merchant house, Maison Joliet.

The five-hectare clos is split into four sections of Pinot Noir, harvested and vinified separately before blending, plus a half-hectare planted to Chardonnay for the white wine. Yields are kept low for concentration, and the wines age for an extended period in oak.
