Benoît Doussot trained in Beaune and worked with Meursault winemaker Jean-Philippe Fichet from 2012 to 2016 before launching Clandestin in 2015. From 2016 to 2020 he also worked alongside Bertrand and Hélène Gautherot at Vouette et Sorbée in the Aube, building his understanding of the region's villages and soils while developing his own project.

Clandestin buys grapes from a small group of certified organic growers on the western and eastern edges of the Côte des Bar, who farm the vines until Doussot and his team pick each parcel by hand. Working with soil scientists Claude and Lydia Bourguignon, Doussot maps each hillside by its Portlandian and Kimmeridgian limestone layers and favors grapes from the middle Kimmeridgian band. The must ferments naturally and ages in oak, Pinot Noir in 600-litre barrels and Chardonnay in 500-litre and 228-litre barrels, before bottling for a second fermentation.
